Aromatic Middle Eastern Lamb Koftas

Makes 12

Cooking time 8-12 minutes, prep time 20 minutes

  • 500g minced lamb
  • 2 cloves garlic, finely grated
  • 1 chopped shallot
  • 3tbsp fresh chopped parsley
  • Finely grated zest and juice of 1 lemon
  • 1tsp dried mint
  • ½ tsp ground coriander
  • 50g fresh breadcrumbs
  • 1 egg, beaten
  • 1tsp chilli flakes
  • Salt and pepper to season
  • Olive oil for frying

Combine all ingredients in a large bowl and mix thoroughly. Shape small handfuls of the mixture into balls of even size. Heat olive oil in a frying pan and fry until browned. Serve with pomegranate salad, tahini dressing or tzatziki.
